PHYSICAL QC (This Protects You Legally)
Moisture % = water content in green coffee. Export standard: ~10–12%. Above 12% → mold risk. Below 9% → brittle/weight loss. “Max 12.0%” is enforceable protection in arbitration.
Water activity = free water for microbial growth. Safe threshold: Aw < 0.60. Hot/humid routes (ex: Saudi CIF) care deeply about Aw; claims often check it.
Density predicts roast performance and correlates with altitude/cup structure. Roasters use it for profiling; traders use it to justify differentials and blending decisions.
Screen size = bean size distribution. Screen 17/18 = large beans and better uniformity. “94% >17” means 94% meet screen 17 threshold, defining grading class.
Export-grade defect count (often per 350g sample). Full: black/sour/severe broca. Partial: broken/minor damage. Low defects = enforceable spec + price justification.
COMMERCIAL (This Protects You Financially)
Price = ICE C futures (specified month) + fixed differential. “Firm” removes ambiguity and enables clean hedging.
Specifying month prevents hedge mismatch. Month letters: H=Mar, K=May, N=Jul, U=Sep, Z=Dec.
Defines who fixes futures and the allowed time window. Avoids disputes about timing.
Protects you from volatile markets and stale quotes. If the market moves too far, the offer can be re-quoted.
Logistics math for freight modeling, CIF/landed cost calculations, and importer planning.
FOB defines risk transfer once the goods are loaded onboard the vessel.
